At home in Kathmandu, explains Rachana, cooking once brought her pleasure as she fed her family delicacies from recipes inherited from her mother.

After fleeing political violence in Nepal and arriving in New York, she spent nearly a decade feeling “totally lost”.

Now her happiness returns, she says, when she prepares traditional specialties for Eat Offbeat, a New York food company where refugees make and deliver ethnic fare.

Devising dishes from the traditional cuisines of the refugees they employ as chefs, the catering company aims to deliver new and unusual tastes to New Yorkers, as well as a second chance in life for their chefs.
